Baked Fish Cakes

INGREDIENTS

  • Baked Fish Cakes Recipe

  • Ingredients:

  • 1 lbs white fish poached (flakey, i.e.: cod, haddock)

  • 3 slices white bread - crust removed, cubed

  • 1 tblsp mustard

  • 2 tblsp Tessemae's Habanero Ranch Mayonnaise

  • Juice of 1/2 lemon

  • 2 eggs

  • 1 tblsp chopped parsley

  • Salt and pepper to taste


METHOD:

  1. Combine mayonnaise, mustard and lemon juice in a bowl

  2. Add eggs and whisk to combine, season with salt and pepper

  3. Add the bread cubes and let sit for 30 minutes for the bread to break down

  4. Flake the fish with 2 forks into 3/4” / 2cm pieces

  5. Add the flaked fish and parsley to the bread mix and carefully fold in, keeping some larger pieces of fish intact

  6. Form fish cakes with a 1/2 cup measuring cup and place on oiled baking tray

  7. Bake at 400F/200C for 10-12 minutes, or until golden brown

  8. Serve with lemon wedges, tartar sauce and habanero mayonnaise
